My basil plants gave me a huge harvest this year so I ended up making pesto several different times. One of my favorites was Chicken pesto pasta. Super easy especially if you already have cooked chicken!

Ingredients
- 2 cups basil leaves, packed
- ¼ cup pine nuts
- 2 cloves garlic
- ⅔ cup olive oil
- salt and pepper
- ½ cup Romano, Parmesan, or Pecorino cheese, shredded
- 1 pkg gluten free pasta
- chicken, cooked and chopped
Instructions
- Boil water and cook pasta according to pkg directions.
- Add pine nuts, garlic and basil to the food processor. Pulse until chopped.
- Add in ½ of the olive oil and pulse until smooth. Add salt and pepper to taste along with remaining oil and pulse again.
- Place in a bowl and mix in cheese. Add pasta and chicken and mix until evenly covered. Serve hot.
