Peppermint Pie is a dessert my mom learned in college and has passed down to all of her kids. We have it every Christmas when peppermint ice cream is available. It always reminds me of Christmases of my youth and being with family.

Ingredients
- Peppermint Ice Cream
- 2 cups Gluten Free Rice Crispies
- 6 oz Semi Sweet Chocolate Chips
- ¼ cup of butter
- Chocolate Syrup
Instructions
- Lightly butter the bottom and sides of pie plate.
- Melt butter and chocolate chips.
- Mix in rice crispies until completely covered.
- Press into pie plate and place in the freezer.
- After crust is firm, soften the ice cream and fill crust evenly with ice cream (usually about ¾ of a tub).
- Freeze at least an hour or overnight. Serve with chocolate syrup drizzled over each piece.
