Olive Theory opened a couple years ago by our house and it is one of those personal pizza places I’ve seen a lot recently. They also have salads and sandwiches, but I go for the gluten free pizza. Below is how my first visit with. I have felt comfortable going there ever since.
I ordered a build your own and let them know it was gluten free. When I asked if they use the same sauce utensils, etc, the cashier grabbed the manager who asked if I had celiac disease. Then he said the GF crust was made in house and while it is made away from other dough, flour can be in the air. He also said that they will do as best they can to avoid any cross contamination (like separate sauces and placing on aluminum foil when in the oven). He was very knowledgeable and helpful and the pizza I had was delicious! I will definitely go back.
