Friends of ours introduced us to Nothing Bundt Cake a year or so ago. I should say, Bill was introduced to it, because I couldn’t eat it since it was not GF. Our friends had offered to buy me a small GF cake from there, but I was skeptical of a bakery that does both GF and regular cakes and didn’t want to eat anything from there without talking to them. So one day I decided to go in and ask a few questions. They make bundtlets (mini bundt cakes) that are GF and they only have one flavor – Chocolate chip. I spoke first with the sales woman working in the front and then she grabbed a woman from the back that did the baking. They both confirmed that the bakery is cleaned every night and the gluten free cakes are made in the morning before any regular cakes are made and stored in a separate containers.
After talking with them, I felt pretty comfortable and bought a regular cake for Bill and guests that were coming for dinner, and a gluten free bundtlet for me. The cake was awesome. Moist and flavorful with cream cheese frosting (my favorite!). It did need some ice cream or a glass of milk or something to go with it – but I always like ice cream with cake! I will say though that it really needs to be eaten in a day or 2 because it does start to dry out a lot quicker than the regular cake does.
