I’m Elizabeth. I like to eat. I like to eat my favorite foods and to try new foods either out at a restaurant or making them at home. So a few years back I started Elizabeth’s Dutch Oven to organize and share recipes I enjoyed. If you’ve followed that blog you will have noticed I’ve hardly posted anything in the past year. That’s because a little over a year ago I was diagnosed with Celiac Disease. I had been having stomach issues along with other symptoms for a long time and was very glad to finally have a diagnosis. However, it meant that I had to change the way I eat, and cook, and how I thought of food all together.
In case you don’t know (because I didn’t really know until a year ago) Celiac Disease is an Autoimmune disease where when I eat gluten it damages my small intestine and prevents my body from getting the nutrients from food. Essentially my body attacks itself everytime I consume gluten.
The good news is that I didn’t need any surgery or meds. The only treatment is eating gluten free from now until forever. I’ve been learning what exactly that means this past year and feel a lot better.
So I decided to start a new blog to share my recipes, my experiences with dining gluten free, and any other tidbits along the way. But don’t worry, the blog will have plenty of yummy recipes & restaurant reviews for everyone, not just people who need to eat gluten free!
