This is one of my favorite salads and I make it all the time in the summer. I grew some heirloom tomatoes this year that are red, but I usually like to have a few different colored heirlooms for this salad. I also like to use some really good olive oil because I think it really makes a difference. I still have a few tomatoes in my garden so I will definitely be making this at least one more time this fall.
Heirloom Tomatoes, Avocado, Cucumber, and Marinated Red Onions

Ingredients
- 2-3 Heirloom tomatoes, different colors, cut into large chunks
- 1 cucumber, cut into large chunks (with or without skin)
- 1 avocado (cubed)
- ½-1 red onion, sliced
- high quality olive oil
- red wine vinegasr
- Salt & pepper
Instructions
- Slice onion and spread in bottom a shallow dish. Generously salt the onions and cover with red wine vinegar. Let sit for a ½ hr to an hour.
- Place cut up tomatoes and cucumbers in a bowl. Generously salt and pepper. Drizzle with olive oil.
- With a slotted spoon remove onions from the red wine bath and add to the tomatoes. Stir together and add in avocado. Taste and if desired add a little bit of the leftover red wine vinegar to the salad.
