In the summer grill a LOT. Last summer we found a really good and super easy pork tenderloin marinade and we liked it so much we made it almost once a week throught the summer. It doesn’t have any exotic ingredients in it, in fact you probalby have all the ingredients in your pantry on any given day and of course they are all gluten free! I really like that you can marinate the meat all day, or it is still tasty if you only have 10 minutes to marinate (which is what I often do because I forget to do it in the morning before I leave for work). It goes well with any sides, we often do some grilled mixed veggies and a salad.
- 1 pork tenderloin (about 1lb)
- 1 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- 1 clove garlic, minced
- Salt & Pepper
- Combine balsamic vinegar, olive oil, garlic, salt, and fresh groud pepper in a large plastic bag. Add pork tenderloin to marinade and refrigerate 10 minutes to 10 hours (delicious no matter how long it marinates).
- Remove tenderloin from marinade and place on heated grill. Grill for 20 minutes turning after 10 minutes.
- Remove from grill (internal temperature should be 160 degrees) and let sit for 5-10 min. Slice and serve.
