Some say the French 75 cocktail dates back to the late 1800s. This drink is named after the French 75mm field gun because it had such a kick. You may also remember seeing it in the move Casablanca. I like finding some history to different drinks (probably my history major coming out), but I must admit, I mostly made this one because I had some leftover sparkling wine I wanted to use up and had all the other ingredients on hand. I used to enjoy a Tom Collins every once and a while, and this drink is similar except it uses champagne instead of soda water. Which is probably why I enjoyed it. And makes me want to go back and try a Tom Collins again!

Ingredients
- 1 ½ oz Gin
- ¾ oz Lemon juice
- ½ oz simple syrup
- Sparkling wine (brut)
- Lemon peel
Instructions
- Peel long thin section from lemon peel.
- In a shaker, add lemon juice, simple syrup, and gin. Fill shaker with ice. Shake vigorously for 20 seconds.
- Strain into cocktail glass or champagne flute and top with sparkling wine. Add lemon peel garnish/twist.
