I’ve mentioned we grill a lot in the summer. A couple of years ago I got a grill basket for to do veggies on the grill. Since then, mixed grilled veggies has been my go to side for anything from pork tenderloin, to steak, fish, or chicken. I usually start with a red onion and mix in some of whatever veggies are in season a the locak farmers market. I like how the red onion gets a little carmelized and some of the grill char is on all the veggies. Since the veggies are already so flavorful on their own we usually don’t season them with anything except salt and pepper, which makes this even easier. Not even sure I should call it a recipe it is so easy.
- 1 Red onion, cut into ½ inch pieces
- 1 Zucchini/Summer Squash, havled and sliced
- 1 Red, green, or orange pepper, cut into chuncks
- 1 buch of asparagus cut into 2 inch sections
- Olive Oil
- Salt & Fresh ground pepper
- Grill Basket
- Chop/cut all veggies.
- Preheat grill and place grill basket on the grill as it is warming up (you want the basket to be hot when you add the veggies).
- Place all cut veggies in a large ziploc back. Drizzle with 1-2 Tbsp of olive oil and season to taste with salt and pepper. Shake bag until veggies are covered with olive oil.
- When grill is hot empty veggies into grill basket and grill for 12 - 18 minutes. Be sure to shake grill basket (make sure to use a grill mit) or stir/flip twice during grilling. Serve!
- NOTE: You can use any veggies you like, but I almost always include some type of onion
