I love corn. I love corn chowder. Most canned corn chowders have gluten or don’t have very good flavor. So I opted to try my hand at making it from scratch. I adapted this from Simply Happenstance, but changed a few things to my liking. This is creamy, filling, and full of awesome corn flavor..
Easy Corn Chowder

Ingredients
- 2 potatoes, rinsed and diced
- 1 onion, diced
- 6-8 slices of GF bacon diced
- 1 red pepper
- 2 cans creamed corn (check that GF)
- 1 can corn, drained (or fresh or frozen)
- 1 TBSP gluten free flour (optional)
- 2 cups skim milk
- ½ - ¾ cup hard cider or water
- Green onions, sliced for garnish
- Salt and Pepper
Instructions
- In a large stock pot, cook bacon and onions until bacon is slightly brown.
- Add red peppers, stir and cook for 1-2 minutes. Add potatoes, cider (or water) and season with salt and pepper.
- Cook for 5-10 minutes stirring often until potatoes have cooed and turn golden, add additional cider/water if needed. Stir a tablespoon of GF flour in if desired – if you prefer it not as thick then omit.
- Add milk, creamed corn, and corn and cook on medium for 15 – 20 minutes.
- If soup comes to a boil turn down to low. Season to taste with salt and pepper. Serve and garnish with green onions.
