I’m not a huge fan of the traditional potato salad. My brother and his wife made this version for us last summer and it has become my favorite and my go to for bbq’s. It is really simple to make and can be made gluten free very easily. You can also add more or less of all the toppings/dressing depending on what you prefer. Everyone seems to enjoy it and it is a nice change from regular potato salads.
Easy Ranch Potato Salad

Ingredients
- 3 lbs Redskin potatoes
- 1 small bunch of green onions, sliced
- 1 small bag of bacon crumbles (make sure gluten free - I use Hormel)
- 1 large container of ranch dressing (make sure gluten free - I use hiddenvalley)
- 1 Tbsp Liquid smoke (make sure gluten free)
Instructions
- Clean potatoes and cut in half. Boil water and add potatoes. Cook until fork goes in easy (about 15 - 20 min)
- Drain potatoes and place in a large bowl. Let cool.
- Add green onions, bacon crumbles (I usually use ½ -3/4 of a bag, but use as much or as little as you like), and cover with about ½ a bottle of ranch and 1 tablespoon liquid smoke. Stir until fully covered.
- Serve or cover and place in fridge until serving. Give another stir before serving and add more ranch if desired.
