I always love the rice at Chipotle. It has a little more flavor and fluffiness to it than plain old white rice. So I looked at several recipes on Pinterest and came up with the version we like best. It is easy to make (although not as easy as dumping it into the rice cooker like I usually do) and turns out great! It isn’t something I make for us all the time, but if we are having company I will serve this with our tacos or fajitas to make it a little more interesting and flavorful.
Cilantro Lime Rice

Ingredients
- 1 cup Jasmine Rice (or Basmati)
- 1 Tbsp Butter (or olive oil)
- 2 cups water
- ¼ cup Cilantro
- 2 Tbsp Lime Juice or more to taste
- Salt to taste
Instructions
- Rinse rice through mesh strainer. Heat butter in saucepan over medium heat. When melted add rice and sauté for 1-2 minutes.
- Add water and bring to boil. Cover and simmer on low for 15-18 minutes.
- Uncover and fluff with fork. Add in Cilantro, lime, and salt and toss to combine.
