Sometimes in the winter I like to endulge in some type of casserole as comford food. My usual go to is this Southwest Chicken Bake, but I wanted to try something different. I saw a recipe for BBQ Chicken Casserole and thought that might be just the change I needed. However it isn’t all that much of a change. Quinoa instead of rice and BBQ sauce instead of Salsa, but it did the trick. It could also easily be made with rice and be just as good. This recipe is pefect for when you want some barbeque comfort food and an easy one dish dinner.

BBQ Chicken Quinoa Casserole

Ingredients
- BBQ Chicken Casserole
- 2 cups cooked and shredded chicken
- 1 cup quinoa, dry
- 2 cups shredded cheese
- 1 ½ cup bbq sauce (I used Sweet Baby Rays – my favorite GF BBQ sauce)
- ¼ cup red onions, chopped
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- Cilantro, chopped
- 1 green onion, sliced
Instructions
- Preheat oven to 350. Cook 1 cup quinoa according to directions on pkg.
- Once quinoa is cooked add chicken, 1 cup cheese, 1 ½ cup bbq sauce, red onion, black beans, corn, and a handful of chopped cilantro to quinoa and mix thoroughly.
- Place mixture into large casserole dish. Sprinkle ½ -1 cup cheese over top of casserole. Cook for 20-30 min until cheese is melted.
- Drizzle with additional BBQ sauce, cilantro, and green onion and serve.
