I love a good caprese salad. It tastes fresh and light especially when I can used tomatoes fresh from my garden or farmers market. I sometimes make it with an added bonus of avocado since avocado makes almost everything better in my opinion. The best part is it is naturally gluten free, no substitutions needed. It is perfect simple and fresh side for a grilled steak or pork tenderloin, with a glass of wine (of course!) on a warm summer evening. Can’t wait for the tomatoes in my garden to be ready!
Avocado Caprese Salad

Ingredients
- 1 pint grape tomatoes, rinsed and halved
- 1 container of small mozzarella balls, halved
- 1-2 avocados, cubed
- 5-6 large basil leaves, chiffonade
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- Salt and Pepper to taste
Instructions
- Prep tomatoes and mozzarella and place them in a bowl. Sprinkle with salt and pepper.
- Add olive oil, balsamic, and stir to combine. Stir in avocado Add more salt and pepper to taste. Serve!
